Definitely not chipotle mayo, and not chipotle ketchup either. Smokiness does nothing to enhance the fry.
The problem with this question is that sweet potato fries vary in quality so much. If you get a good batch, the sweetness comes through, but usually you get the fries that have been frozen and they lack a lot of that sweetness.
But that’s beside the point, we need a sauce that compliments the texture, the sweetness of the potato, and the saltiness (since anyone who doesn’t salt sweet potato fries is crazy). Ketchup doesn’t work because it’s already sweet, it works great for potato fries, but isn’t quite right for sweet potato fries. I think you need a savory sauce. Aioli has been done and it’s a just not right either.
Here is my idea, combine the tartness of the tomato from ketchup with the savory of an aioli. I think a sauce using sun dried tomatoes, olive oil, garlic, lemon, and cracked pepper. Blend that together and you might have something. It’ll be the consistency of a pesto so you may need to add it to mayonnaise to make it work.
Of course I could be completely nuts and it could be awful.

For sweet potatoes, I’ve used lemon tahini yogurt sauce with parsley. It was awesome.
That sounds great. I think a tasting session for sweet potato fry sauces may be in order.
You should try the Toasted Frog in GF. It’s both chipotle and aioli, but very well done. It’s pretty spicey but I think it pairs well as their fries are sweeter than some.
When I make sweet potatoes, I usually slice them thinly and saute them in olive oil with onions, salt and pepper. I usually don’t use a sauce with them (mainly because I like the flavors as they are).
In college one of the on campus restaurants they had a “sweet cinnamon” dipping sauce which I can best describe from my 10 year old memories as an apple cinnamon butter. Man was it ever good.
That sounds interesting, not sure if it would be the perfect compliment to Sweet Potato Fries, but maybe.
I was going to say something maple or cinnamon… I’m thinking salty fries with a sweet dipping sauce would be the best combo of savory/sweet. Now I’m hungry..
A little googling and I see a lot of options out there. My favorite, not tried, is a horseradish sauce found here:

The horseradish sauce sounds good, but I wouldn’t make it with creme fraiche, probably with soy or a soy mustard vinaigrette (which is what I’m going to do tonight).
My favorite is the peanut aioli with sweet potato fries at Edina Grill (probably at all their restaurants, but that’s where I feel in love with it). Its nutty and thick and YUM.
I don’t know what it’s called or what’s in it, but the sweet sauce they have at the chatterbox is perfect with them. I think it’s maple syrup oriented, but I can’t remember. I also may have been mildly intoxicated when I ate them.
The place I eat a lot serves a fry platter with sweet potato, regular fries and chips. One of the sauces they included is a Sweet Chili Sauce. That’s the best I have had. Also I want to try both regular fries and sweet potato fries with a Hollandaise.
I’d totally mix the ketchup with the aioli, but I’m a mayo + ketchup for fries type of girl. Well, truly I use Vegenaise, which isn’t really mayo, but oh well.
OK, now what I want to know are other ways people cook sweet potatoes. I’ve baked them (were ok), I’ve sauteed them (good but not awesome) and it’s hard to get them crisp enough for my liking. I’d rather not deep fry them. Thoughts/suggestions?
I’ve only fried them the few times I’ve ever made them at home. I’m not sure what the best method would be if you wanted to go healthier. Maybe bake them and then brush with oil and broil for a few minutes to get the outside crisp.
We had sweet potato fries at one restaurant I used to work at and had an almost addictive sauce to go with them. I don’t remember the recipe other than it being ketchup based with a fair dose of cinnamon. The cinnamon does a nice job cutting the sweet side of the ketchup, but you still have the good vinegar tang.
